Bean and Grains
Beans and grains are an excellent way to boost the nutritional content of your meals. Some people experience gas or bloating with beans but with these tips you will be able to increase the digestibility and increase the absorbtion of nutrients which will eliminate or greatly reduce any digestive issues. Start with smaller portions while your digestive tract becomes accustomed to the beans.
Soaking dried beans is key as it breaks down the enzyme inhibitors coating the beans. Draining and rinsing thoroughly canned beans until they are no longer foamy will help to increase digestibility.
Grains will be more easily digested with soaking as well, however, not all require soaking. Please read the recipes carefully to determine which will benefit from soaking beforehand.
