Some of my favorite meals to prepare are casseroles because I can cook a large amount and have left-overs for several more meals; these can be used for lunches or dinners for a few evenings. There is no rule that says we have to eat something different for dinner every night. And there's no rule that says we can't have dinner type foods for breakfast. So go ahead and make large quantities, this will save you time in the long run, especially on the busy nights when you just don't have time to create a healthy and nutritious meal from scratch.
